What we like
- Contoured handle shape is noticeably more ergonomic in an extended pinch grip than a plain oval handle
- Full tang and bolster construction matches Wüsthof-level durability at a somewhat lower price
- Ice-hardening (Friodur) process gives a consistent, reliable edge across the line
- Curved bolster design leaves more usable blade length for fine work near the handle
What we don't
- Constantly compared to Wüsthof rather than judged on its own, which undersells some genuinely different design choices
- Still meaningfully heavier than a Japanese-style knife, with the same fatigue tradeoff during long sessions
- Edge retention trails harder premium steels, needing more frequent honing than a Mac MTH-80
- Handle contouring that fits one hand well can feel slightly off in a hand shaped differently
