What we like
- Full-tang forged construction feels substantial and balanced in a way stamped knives can't match
- Full bolster protects fingers during heavy chopping and gives the knife a reassuring heft
- Extremely well supported — sharpening services, replacement parts, and resale recognition are all easy to find
- Softer, tougher steel forgives rough treatment better than harder premium blades
What we don't
- Noticeably heavier than a Japanese-style knife of the same length, which shows up as fatigue during long prep sessions
- Full bolster makes sharpening the heel of the blade edge-to-edge more awkward without a guided system
- Edge doesn't hold as long between sharpenings as Mac's harder steel or Japanese gyutos
- You're partly paying for the name — a nearly identical knife exists in Wüsthof's own lower-tier lines for less
